Sweet And Satisfying Antioxidant Superfood Bars


  • 1 cup raw pumpkin seeds
  • 2/3 cups raw unsweetened coconut flakes
  • 2/3 cups almond slivers
  • 1/3 cup goji berries 
  • 1/3 cup maple syrup
  • 3 bars vegan dark chocolate (I used Hu Kitchen Simple Dark Chocolate bars)


  1. Mix all the ingredients together except the chocolate.
  2. In an 8×8 baking tray lined with parchment paper, spread the mixture out evenly.
  3. Bake at 325 degrees F for 25 minutes.
  4. Melt the chocolate bars and pour over the base. Spread evenly.
  5. Freeze for 1 hour and then cut into bars.
